Banana & Honey Flapjacks

Hello lovely people,

Today I felt in the mood for making flapjacks but I didn’t want to add all of the excess sugar and syrup. I wanted to make something that tasted naughty but that was actually just full of goodness. These are great when you’re feeling low on energy and need a little pick me up. They also make a great breakfast on the move!

Ingredients

2 large bananas, 4 tbsp honey, 100g butter spread, 400g oats, 50g raisins, 50g dried mango, 50g chopped nuts, 1 tsp cinnamon, 1 tsp ground ginger

Method

Preheat the oven to 200c.

Put the raisins and dried mango in a bowl and cover with boiling water. Leave to rehydrate for a couple of minutes.

Mash up the banana and mix with the butter spread and honey until (relatively) smooth.

Stir in the remaining ingredients.

Line a baking tin with baking paper and pour in the mixture.

Push the mixture down to fill all of the gaps and place the tin in the oven.

Bake for 25 minutes or until golden on top.

Leave for 5-10 minutes to firm up before cutting up.

Mine made 18 good sized pieces.
