Blueberry Muffins

All these episodes of The Great British Bake Off have turned me into a crazy baking person (as if I wasn’t one already!) This week was bread week, If you haven’t seen it then you need to check out the signature bakes! A lion and a bread-cycle! Awesome.
Saying that, I didn’t fancy making bread, but cakes instead.
I bought a punnet of blueberries and looked up recipes. The recipe I used is adapted from this one here and they are SO scrummy and packed with blueberries. Dad’s nearly eaten three already!
Get baking
2 medium eggs, 1 1/4 cup of sugar, 1 cup of milk, 1/2 cup of olive oil, 3 cups of self raising flour, 1/2 tsp salt, 2 tsp vanilla extract, large punnet fresh blueberries.
-Preheat oven to 200c
-Whisk the eggs and sugar together.
-Pour in the milk and oil and stir in.
-Add the vanilla and salt and stir in.
-Gradually add the flour and mix until combined.
-Add the blueberries and gently stir them in.
-Spoon out into cases. (I wanted mine BIG so I basically filled them.)
-Bake for approximately 25 minutes.
-Cool and enjoy! Nom nom nom!
